For 3 persons
Ingredients
- 2 sweet potatoes
- 1 cucumber
- 250g cherry tomatoes
- 2 red onions
- 200g quinoa
- Parsley
- 1 packet of halloumi or feta cheese
Sauce:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 tsp honey
- 2 tsp mustard
Preparation
- Preheat the oven to 200 degrees.
- Peel the sweet potatoes and cut into cubes.
- Place on a baking sheet and sprinkle with oil, pepper and salt.
- Bake for 30 min.
- Cut the onion into rings and also bake for 20 min.
- While doing so, dice the cucumber and cherry tomatoes. Mix together and add parsley to taste.
- Cook the quinoa and mix with the vegetables.
- Remove the baked sweet potato and onion from the oven and mix with the rest.
- For the sauce, mix all the ingredients together.
- Bake the halloumi with a little honey and top with the vegetable/quinoa mixture.
