Ingredients
For the balls:
– Olive oil
– ¼ onion
– ½ clove of garlic
– 225g ground beef
– Pepper
– Salt
– ½ egg
– 5g breadcrumbs
– 2 whole wheat pita breads
For the mint yogurt:
– 5g mint leaves
– 140g low-fat natural yogurt
– juice of ¼ lemon
– salt
For the salad:
– ½ cucumber
– 70g cherry tomatoes
– juice of ½ lemon
– 1 tbsp chopped parsley
– salt
Preparation method
– Preheat the oven to 190 degrees.
– Chop the onion and garlic.
– Mix the ground beef, onion, garlic, salt, pepper, egg, and breadcrumbs in a bowl and form the mixture into balls.
– Place the balls on a baking sheet lined with parchment paper and drizzle with olive oil.
– Bake the balls for 15 minutes until cooked through.
– Meanwhile, warm the pita breads in the oven.
– Finely chop the mint and stir into a bowl with the low-fat yogurt, lemon juice, and salt.
– For the salad, dice the cucumber and halve the tomatoes.
– Mix them together in a bowl. Stir in the lemon juice, parsley, and salt.
– Remove the meatballs and bread from the oven. Cut the pita bread rolls in half.
– Fill each half with a few meatballs and spoon in some of the mint yogurt.
– Serve with the salad.
