Ingredients
– 100g zucchini
– 100g dark chocolate
– 1 tbsp unsweetened bitter cocoa
– 100g granulated sugar
– 4 eggs
– 2 tbsp flour
– 1 tsp baking powder
– pinch of salt
Preparation method
– Preheat the oven to 150 °C.
– Clean the zucchini, remove the skin and discard the seeds, then cut into cubes.
– Steam the zucchini for a few minutes and then blend into a purée.
– Melt the chocolate in a double boiler and then mix in the cocoa and blended zucchini.
– Add the egg yolks, sugar, flour, baking powder, and salt.
– Beat the egg whites and gently fold them into the batter.
– Spoon the batter into a cake tin and bake for 40 minutes at 150 °C.
