Ingredients
– 1 onion
– 2 cloves of garlic
– 2 pointed peppers
– 800g canned peeled tomatoes
– 4 eggs
– Paprika powder
– Parsley
– Coriander
– Cumin seeds
– Oil
– Salt and pepper
– Bread/pita bread
Preparation method
– Chop the onion. Finely chop the garlic. Remove the seeds from the bell pepper and dice it. Finely chop the parsley and cilantro.
– Heat the oil in a large pan over medium heat. Fry the onion for 5 minutes, stirring regularly.
– Fry the garlic, bell pepper, parsley, paprika, and cumin seeds for 2 minutes.
– Add the peeled tomatoes to the onion and bell pepper mixture, chopping them up a little if necessary. Stir.
– Season with salt and pepper and simmer for 10 minutes.
– Make 4 wells in the tomato mixture and crack the eggs into them.
– Season with pepper.
– Cover the pan and simmer for 5-7 minutes, until the egg whites have just set.
– Heat the pitas in the oven or toaster.
– Sprinkle the shakshuka with coriander and serve with (pita) bread.
