Ingredients
– 900g pumpkin cubes (fresh or frozen)
– 500g gnocchi
– 1 to 2 packs of goat cheese with honey (150–300g)
– 40g almonds (finishing touch)
– 40g arugula (finishing touch)
– Olive oil
Preparation method
– Preheat the oven to 200 degrees.
– Line a baking sheet with parchment paper and spread the pumpkin cubes over it. Mix with 2 tablespoons of olive oil.
– Place the goat cheese in the middle.
– Roast the pumpkin with the cheese in the oven for 15 minutes.
– After 15 minutes, add the gnocchi, stir in some olive oil and season with salt and pepper. Bake for another 10 minutes.
– Coarsely chop the almonds.
– Remove the baking tray from the oven and spread the arugula and almonds over it.
Tip: add extra vegetables of your choice, such as bell peppers, red onions, etc.
